In a bowl, marinate tofu with tamari and ginger, if using, for 2 hours. In the oven or on the barbecue, roast well-drained tofu.
In a decorative bowl, nicely arrange all the ingredients, then sprinkle with lemon juice and oil to taste. Season with pepper.
Variation: A pleasing, popular dish, Buddha Bowls are loaded with protein. Feel free to vary the ingredients at will, using your favourite vegetables (bell peppers, carrot, celery), replacing the edamame with bean sprouts or young shoots, etc.
