Caponata

Recipe Ingredients

2 tbsp of olive oil
1 chopped onion
2 grated garlic cloves
1 diced eggplant
1 red pepper cut into cubes
2 chopped celery sticks
½ tsp of chili powder
1 can of crushed tomato
2 tbsp of capers
6 green olives cut into pieces
1 tbsp of balsamic vinegar
1 tsp of cane sugar
½ cup chopped fresh parsley
1 container Fontaine Santé Baba Gannouj Hummus

Preparation

In a large skillet, heat the olive oil and brown the onion for 5 minutes. Add the garlic and continue cooking for one minute.

Add the eggplant, pepper, celery and chili powder for another 10 minutes, stirring occasionally.

Add crushed tomatoes, olives, capers, balsamic vinegar and sprinkle with sugar. Cover and simmer for 15-20 minutes, stirring occasionally.

Remove from heat, add fresh parsley.

Serve over a generous portion of Baba Gannouj with barley, quinoa or a grain of your choice.
