Mini spinach crepes

Recipe Ingredients

Crepe
1 cup of flour
1 ½ cups of vegetable milk
2 cups of baby spinach
½ cup of pistachios
2 eggs
1 tsp of salt
1 tbsp of melted butter

Garnish
1 container of your choice of Fontaine Santé Hummus
1 sliced avocado
Your choice of greenery
Crumbled feta

  • Preparation: 5 minutes

  • Cooking time: 15 minutes
  • Portions: 10 small crepes

Preparation

Place all the crepe ingredients in a blender and mix until a consistent texture is obtained.

In a small, well-heated, nonstick skillet, heat the oil over medium-high heat and cook the crepes. Make sure to extend the crepe mixture thinly and to cover the entire skillet. Cook for about 1 ½ minutes per side.

Let the crepes cool and then garnish generously with hummus, slices of avocado, a little greenery and feta cheese.
