Eggplant Roll-Ups

Recipe Ingredients

1 medium-sized eggplant, sliced into 5mm thick pieces
1 container of Fontaine Santé Greek Olive Humm (or your favourite Fontaine Santé Hummus)
1 container of Fontaine Santé Garlic Sauce
1 container of Fontaine Santé Couscous Salad
Chili oil (ideally with garlic)
1 container of Fontaine Santé Labneh (flavour of your choice)
Pine nuts and finely chopped fresh parsley, for topping

Preparation

Brush the eggplant slices with olive oil, season with salt and pepper, and grill them on a BBQ or in a pan until cooked.

Spread a layer of hummus and garlic sauce, then add a generous spoonful of our Couscous Salad.

Carefully roll up the eggplant slices, starting from the smaller end for a cleaner result.

Finish with a drizzle of chili oil and a dollop of Labneh, then top with pine nuts and parsley.
