Healthy Stuffed Canapes

  • 8 mini-tomatoes
  • 1 English cucumber
  • 1 container Fontaine Santé Roasted Red Pepper Hummus
  • 1 container Fontaine Santé Tofu Spread
  • Pine nuts, lightly toasted
  • Fresh dill or chives
  • Fresh ground black pepper

Preparation

Cut tomatoes in half and gently scoop out. Cut cucumber in thick slices and lightly scoop out the middle to form a cavity. Stuff half the tomatoes and cucumbers with hummus, then second half with spread. Garnish with pine nuts, dill and chives. Season with pepper to taste.
