1 cup of Traditional Fontaine Santé Hummus
1 tbsp of olive oil
3 tbsp of non-dairy milk of your choice (almond, cashew, soy etc.)
1 pinch of smoked paprika
Salt & freshly ground pepper
¼ cup of chopped fresh basil
In a bowl, mix the hummus with the olive oil and milk, then add the fresh basil. Add the paprika and a generous amount of salt and pepper.
Using either a mandolin, spiralizer or a vegetable peeler, make noodles from the two zucchinis. Mix the noodles into the hummus sauce. Serve and top with fresh basil leaves, cherry tomatoes and flaked almonds if desired.
