1 block of Fontaine Santé Tex-Mex Tofu
1 cup of panko
2 tbsp of Cajun spices
1 tsp of garlic powder
2 tbsp of nutritional yeast
½ teaspoon of salt
Freshly ground pepper
2 eggs, beaten (for a vegan option, use ½ cup of vegetable milk)
½ cup flour
Vegetable oil for cooking
Creamy Honey Dipping Sauce
½ cup of Greek yogurt or mayonnaise
1 tbsp of Dijon mustard
1 tbsp of honey
½ tbsp of Cajun spice
Freshly ground salt and pepper
Combine all the ingredients for the dipping sauce in a small bowl and set aside.
Before starting, press the block of tofu into a clean cloth to remove the excess water. Break the tofu into pieces with your fingers, the pieces do not all have to be of equal size. Count for about 30 pieces of tofu.
In a bowl, add the flour; in a second bowl, beat the eggs and in a third shallow dish, combine the panko, Cajun spices, garlic powder, nutritional yeast, salt and pepper.
*Pro tip before you start: Always use the same hand for handling the food in the dry ingredients (flour and panko) and use the other for wet ingredients (eggs). This will prevent you from having breaded fingers!
Drop a piece of tofu into the flour and remove the excess. Transfer to the container with the eggs. Coat the tofu well with the beaten eggs, drain the excess then transfer to the container containing the panko and spice mixture. Gently press the tofu into the panko so that it sticks well, then shake a little to remove the excess. Repeat for all the tofu pieces.
Prepare a large plate or baking sheet with paper towels.
Heat about ¼ cup of vegetable oil in a large non-stick skillet. Once the oil is hot, lower the heat a little, and add in 10 tofu nuggets. Cook for one minute on each side until the breadcrumbs are crisp and coloured.
Place the nuggets on absorbent paper once they’re done cooking and repeat the steps for 10 nuggets at a time. Add oil if necessary. You can also bake the nuggets in the oven if desired. To do this, preheat the oven to 375 ° F and bake for 25 minutes, turning the nuggets halfway through cooking. Serve with the creamy honey dipping sauce.
